Business Spotlight: Abe’s Caramel Corn Shoppe

[July 18, 2026]  This week, the Saturday Business Spotlight is shining on Abe’s Caramel Corn Shoppe at 117 North Kickapoo in Lincoln. The shop is owned by Michael Simonson with his daughter Anastin being the store manager.

Abe’s is a long-known business in Lincoln, previously belonging to the founding owner Helen Rainforth. When Rainforth made the decision last year to leave the business, she offered if for sale and Simonson was happy to accommodate.

The business is classified as a specialty popcorn shop with the tasty treat being made fresh daily at the shop. In addition, the store offers a variety of gift items and other good things.

They are best known for their caramel corn and cheese corn, but they offer a variety of flavors, some quite unique and unusual.

The new owner is approaching his one-year anniversary in the store and says he intends to keep the name and the location, as they are a 45-year landmark in Lincoln.

Simonson has been active in businesses in Lincoln and Logan County for several years, and he says this new venture is special because of the people they serve. “We love all our faithful customers,” said Simonson, “and we love helping them find the perfect gift.”

When asked what advice he would give to new business owners in Lincoln, he said, “Be friendly, be kind, but most of all, always be honest with customers and yourself whether you are at your business or out and about in your local community.”

Abe’s Caramel Corn Shoppe has five employees who are well versed and able to assist customers with their needs and wants.

The shop is open Tuesday through Friday from 10 a.m. to 5 p.m. and Saturday 9 a.m. to 5 p.m. The store is closed on Sunday and Monday.
